Below are a bunch of recipes that have lived in my notes or in my head for some time. Ordinarily, I would just take a picture of a recipe and use it once and then forget about it (no sync between my apple notes and android phone... sigh...) So, now I'll just put recipes here so I can look at them whenever. Enjoy!
A few things I assume are that you are using Celsius, and have a scale. Everything will be measured in metric and by weight unless specified otherwise. Sometimes I will eyeball stuff. You have been warned.
baked beans
ingredients
- 350g dried black beans or haricot beans
- baking soda
- blackstrap molasses
- spices of your choosing
instructions
- take your beans and put them in a bowl of water to soak for a day. you want to give enough water to cover them, then an extra inch and a half to stand in
- take the soaked beans and rinse them once they are plump the next day
- place the beans in a pot with enough water to cover plus an inch, then add a bean-sized pinch of baking soda.
- boil the beans for an hour, then remove and rinse them with cold water
instructions, continued (SLOW COOKER)
- prepare a slow cooker with enough water to cover the beans and let it heat up. DO NOT heat the slow cooker without water in it!!!
- transfer the beans into the pot. plop a tablespoon of molasses into the pot
- add your spice mixture. I make mine spicy with lots of cayenne and chili and I also put cumin and garlic and onion powder and such in there. go crazy.
- if you require tomato flavor, this is the time you would put a little tomato paste in there
- cook until soft and spiced to taste, could take between 6 and 8 hours
- remove from the oven and transfer to a dish and bake the beans until there is little wetness remaining at around 160 degrees
instructions, continued (HOB)
- prepare the pot again and transfer the beans back in, this time bring the water up to a boil then down to a simmer
- simmer the beans until they are cooked. takes about half the time of the slow cooker.
- do everything else as described in the previous section with spicing and baking.

more of a bean methodology than a recipe, I hope you enjoy! with or without tomato sauce I love cooking these and they last me like three days.
plain scones
ingredients
- 500g flour
- 250ml milk
- 70g castor sugar
- 50g cold butter
- 20g baking powder
- three eggs, two for the dough, one for an eggwash
instructions
- pre-heat oven to 220 degrees
- prepare your eggwash now by beating up one of your eggs. set it aside for now
- rub cold butter into the flour until it is in pea-sized pieces
- add sugar and baking powder, whisk it all together
- add eggs and mix gently until dry and crumbly
- add the milk little by little. aim for soft and sticky texture. don't dump all the milk in!
- turn out the dough onto a floured surface, fold together until incorporated
- form dough into a ball and flatten
- cut the dough into shapes but do not twist your cutting tool, press straight down
- place the scones on a baking tray and allow them to rest for 10 minutes, then brush with your eggwash
- bake for 15 to 20 minutes until nicely browned
ramen base
ingredients
- 500ml water
- 1 tbsp soy sauce
- 2 tsp chicken powder
- *optional, but recommended - tsp sesame oil, then tallow or lard
- 1/4 tsp black and white pepper
- 1/4 tsp garlic, ginger, onion powders
- big pinch of msg
tuna salad (1941)
ingredients
- diced celery, cucumber, green bell pepper
- teaspoon of grated onion
- salt, pepper, paprika
- two tablespoons of mayo
- lemon juice
pancakes
ingredients
- 400g plain flour
- 400ml buttermilk (or, make your own equivalent with whole milk + 1tbsp of lemon juice)
- 4 eggs
- 4tsp sugar
- 2tsp bicarbonate of soda
- small pinch of salt

Rest the mixture for fifteen minutes. Cook in a buttered pan.
shakshouka
ingredients
- one medium white onion
- 250ml of tomato passata
- half a tablespoon of tomato paste
- glug (like a tablespoon-ish) of olive oil
- salt, black pepper, oregano, cumin, cayenne pepper, sugar
- however many eggs you want. i usually have three
instructions
- dice the onion nice and small
- bring the olive oil and chili oil up to temperature in a good size pan
- fry the diced onion in the oil with the tomato paste
- add a little water to deglaze, then add the passata
- add salt, pepper, spices except for sugar
- stew for a little bit, use your discretion, then taste and add a pinch of sugar if its too bitter or unbalanced
- stew until you can make little divots in the sauce, then crack the eggs into those divots
- cover and cook until eggs are to your liking

Serve hot, on its own or on toast.
pound cake
ingredients
- 180g plain flour
- 200g sugar
- 250g unsalted butter
- 3 eggs
- 1 tsp salt
- 2 tbsp vanilla liquid
- 3 tbsp whole milk
- 1/2 tsp baking powder
instructions
- pre-heat the oven to 180c or 160c fan
- line a loaf tin with parchment
- beat all the ingredients together in a big bowl until smooth and incorporated
- put the mix in the tin, spread evenly
- bake for 45 minutes, remove from oven to cool

the last time I baked this it was wet in the middle. I'm either gonna have to add more flour, cook it longer or use less butter.
pork meatballs
ingredients
- garlic
- ginger
- 1 egg
- soy sauce
- dark chinese vinegar
- shaoxing wine
- tablespoon of cornstarch
- salt
- msg
- black pepper, white pepper

No measurements were listed when I noted this down. Use your own discretion. These can be baked, fried or steamed; they are tasty any way you cook them in my experience.
Expectation is, if I remember correctly, you just put everything in, mix it, 'da' it (pick up the ball of spiced up wet meat and slap it down in the bowl) a few times then let it marinate for an hour or so. Then take it back out and cook it.
